I feel like this shows up at a holiday table with a lot of different names, vegan corn pudding recipe, vegan cornbread casserole, okay maybe just three including the vegan easy corn casserole recipe.
But still, there is more than one name for this Thanksgiving dinner dish but it's all the same traditional corn casserole but a homemade vegan one!
Now this recipe almost always called for jiffy corn muffin mix, this one does not.
But if you want to make this vegan recipe even easier then you can use the vegetarian jiffy cornbread mix.
I'll explain how in a bit.
The original jiffy corn muffin mix has animal products, we don't want that.
This has the perfect balance of savory and sweet and is a great way to switch up side dishes for holiday dinners.

I had never even heard of corn casserole until about 10 years ago.
One of my good friends said it was her favorite Thanksgiving side dish, so I figured it was worth a shot, making a vegan version of course.
Little did I know everyone would love it so much and now we have it every year on our holiday table.
I love that this one uses mostly homemade ingredients and I didn't have to run around town trying to find the vegetarian jiffy cornbread because it's not always easy to find.
People like to make all sorts of different versions of this.

If you've never had any corn pudding recipes before then you're in for a treat.
This is more of a good holiday recipe side dish than bread.
It has a more wiggly appearance.
It's rich and delicious.
Can you make this recipe gluten-free?
I have never tried it but I think you could sub out the all-purpose flour for a good gluten-free all-purpose flour.
How do you store this?
If you are baking this the day before then go ahead and let it come to room temperature before covering it and storing it in the fridge.
When it's time to serve this is best to reheat in the oven if you can.
If not the microwave will work also but you will lose some of that crispiness on the top.
How do you serve this?
This is best if you can serve it warm or at room temperature.
Can you freeze this?
Yes, wait for it to cool to room temperature.
Cover it really well with saran wrap and aluminum foil.
Place in the freezer, unthaw the night before. Then the next day reheat it in the oven.
What if I want to use the jiffy cornbread mix?
If you would rather use the store-bought version then omit the flour, cornmeal, sugar, baking powder, and salt.
And just add the box mixed with the rest of the ingredients and cook accordingly.
What if I want to make a healthy version of this corn pudding and lighten it up?
You can try using plain vegan yogurt makes sure there is no flavor or a lot of sweetness and sub half of it for the vegan sour cream.
You could do all of it but I haven't tried that version.
I only really make this once a year so I don't worry about it not being the healthiest of recipes.
But it's always nice when you can cut down on some fat while still getting a good flavor.
One other untested option- is cutting down the vegan butter to ¼ cup and then adding non-dairy milk for the other ¼ cup.

- cornmeal
- white sugar
- baking powder
- salt
- vegan sour cream
- vegan butter
- cream-style corn
- whole kernel corn
How do you make this vegan creamed corn casserole?
Lucky for us, this happens in a jiffy.
Start by preheating your oven to 350 degrees.
Take an 8x8 baking dish and lightly grease, set aside.
You can use cooking spray or get some grease on a napkin or paper towel and wipe the inside of the dish sides and bottoms.
Take a large bowl and combine the dry ingredients- all-purpose flour, cornmeal, sugar, baking powder, and salt, and stir until it's mixed well.
Now add your wet ingredients- vegan melted butter, vegan sour cream, sweet corn kernels, creamed corn, and any mix-ins you want and stir until combined and no flour streaks remain.
Pour this corn mixture into the greased casserole dish (8x8 baking dish) and bake in the preheated oven for 45 minutes.

Hi Stacy! Yes, it sure can. You either make it up and place it in your baking dish covered in the fridge until ready to bake (it will take a bit longer to cook cold from the fridge). Or you can cook it up the day before and then reheat it before serving I have done both with good results. Thanks for stopping by!
