    Easy Vegan Teriyaki Soy Curls

    This vegan teriyaki soy curls dinner is a family favorite. There are NEVER leftovers. And It comes together in 30 minutes.

    When I was growing up my dad made teriyaki chicken almost every night, actually he still does.

    I missed teriyaki a lot and unfortunately for me I can't eat much tofu so I needed to find an alternative.

    That's where thee incredible soy curls came in.

    What are soy curls?

    They are heavenly little dehydrated soy. That doesn't make it sound real tasty, but trust me it is!

    You rehydrate them, squeeze the water out and then season it however you want it in this case with teriyaki sauce.

    Let's talk vegan teriyaki sauce.

    This teriyaki sauce is easy to make and oh so tasty. It's the perfect amount of sweet and salty to me.

    This sauce takes just a few minutes to whip up. You could use store bought but this is just as easy and SO delish!

    It can be gluten free if you use gluten free soy sauce.

    What do you need to make these vegan teriyaki soy curls?

    • soy sauce (regular)
    • brown sugar
    • water
    • ginger, powder
    • garlic cloves
    • chives, dried
    • corn starch
    • cayenne pepper
    • Soy curls
    • rice

    How do you make this vegan teriyaki?

    Start by soaking your soy curls. 

    Put 3 cups of soy curls in a bowl and cover them with warm water- let sit for 10 minutes.

    While your soy curls are soaking, make your sauce.

     Combine all the sauce ingredients except the cornstarch and stir.

    Take your cornstarch and mix with 1 TB of water until smooth then pour into the sauce and stir until combined, set aside.

    Now strain your soy curls. Remove all the water by squeezing them until they stop producing water.

    Take your 2 TB cornstarch and mix it with your soy curls.

    Add your soy curls in a hot large skillet and cook the soy curls until they are browned a bit.

    Now take the pan off the heat for a minute or two.

    Stir the sauce and pour all but ¼ cup of the sauce in the somewhat cooled skillet (If you do it too hot the sauce will burn).

    Stir and let the sauce soak into the soy curls this only takes a few minutes, keep stirring.

    Then remove from heat.

    Take the remaining Teriyaki sauce and stir then heat in the microwave for 30 seconds to 1 minute until a little thickened.

    Serve with rice and drizzle with the remaining teriyaki sauce and serve.

    We always have this meal with a big side of roasted vegetables.

    Ingredients

    Teriyaki Sauce

    • ¼ cup soy sauce regular
    • 3 TB brown sugar
    • ¾ cup water
    • 2 garlic cloves minced
    • 1 teaspoon ginger powder
    • ½ TB chives dried
    • ½ TB corn starch + 1 TB water
    • pinch cayenne pepper

    Soy curls

    • 3 cups dried Butler soy curls
    • 2 TB Cornstarch
    • Cooked rice for serving

    Instructions
