I would use real onion versus onion powder, you can use garlic powder if you must but you get much more potent flavor with real minced garlic.

If you have a food processor, you can try using that in small batches depending on how big your processor is.

How do you make this homemade vegan chicken broth?
Heat the olive oil in a large pot over medium heat.
Add in the onion, garlic, carrots, and celery and sauté for 5 minutes, stirring occasionally.
Add in the vegetable broth, water, bay leaves, thyme, oregano, salt, poultry seasoning, and pepper and stir to combine.
Bring the mixture to a boil, then reduce heat to low and simmer for 20 minutes.
Remove the bay leaves and discard them.
Use an immersion blender or blender to blend the vegan chicken broth until smooth.
How much broth does this recipe make?
This recipe makes about 6 cups of broth.
