I am always working on recipes for healthy after schools snacks so my kids don’t go straight for the chips, etc. These vegan apple cinnamon granola bars seem to be a total winner. The kids love them so much.
I love making homemade bars because I know exactly what’s in them and can manipulate the amount and what kind of sugar goes into them.
I love the combination of cinnamon and apples. It’s just too good. People really knew what they were doing when they put those two flavors together.
We eat these bars for a quick breakfast or after school, before bed snack.
What do you need to make these vegan apple cinnamon granola bars?
- oats
- cinnamon
- baking powder
- salt
- maple syrup
- vegan milk
- vanilla extract
- flax eggs ( 2 TB ground flax seeds with 4 TB water)
- dried apples or regular apple
- rice Krispies
- brown sugar
How do you make them?
Start by preheating the oven to 350 degrees. Grease an 8×8 glass pan and set aside.
Make your flax eggs by grinding some flax seeds. I always use a small coffee grinder. Take 2 TB of the ground flax meal into a small cup, add 4 TB of water, stir then set aside.
Now take your dried apples and chop them in small pieces. These do plump up a bit while cooking.

Take 1 cup of the oats and grind it to make flour, again I use the small coffee grounder or my Blendtec blender. Take a medium bowl and combine the ground oats and remaining oats, cinnamon, baking powder, salt, Rice Krispies, brown sugar, and stir. Now add the plant milk, maple syrup, vanilla, add the chopped dried apples and stir until all combined.

Take your mixture and press it evenly into the 8×8 greased pan. Cook for 15-18 minutes. Let cool before serving.

These vegan apple cinnamon granola bars are a perfect afternoon snack or breakfast. My kids love these!
Ingredients
- 2.5 cups Oats
- 2 tsp cinnamon, ground
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/4 cup maple syrup
- 1/4 cup brown sugar
- 3/4 cup vegan milk
- 2 tsp vanilla extract
- 2 flax eggs (2 TB flax meal with 4 TB water)
- 1 cup dried apples, chopped or fresh apple
- 1/2 cup rice Krispies
Instructions
