    Vegan Peanut Butter Pie (No bake)

    This vegan peanut butter pie recipe is the perfect decadent dessert for the peanut butter lover in your life. This is a no-bake pie made with simple ingredients you likely have on hand. This peanut butter pie starts with a chocolate cookie crust, layered with fluffy peanut butter filling, and topped with vegan whipped cream.

    I'm always looking for a delicious dessert to try out for special occasions or just because I really enjoy a good dessert.

    This peanut butter pie has been calling my name for a while, and I decided it was time to bust out a no-bake dessert with the current heat wave we are in.

    This vegan dessert will make people question that it's vegan.

    It's super-rich; you only need a small slice to put you into a chocolate peanut butter heaven.

    I brought this over to one of my favorite taste testers for the blog. They are the sweetest family of four, and they were just going to have a bite before dinner.

    Then I got a text that the pie was gone and it was their new favorite dessert.

    I love that this recipe doesn't use any silken tofu or vegan cream cheese. 

    The typical peanut butter pie has cream cheese and cool whip in the mix.

    Although those things can make it a bit more light and fluffy, the fewer ingredients, the better.

    Can I use something other than an oreo crust?

    If you prefer to use a chocolate cookie crust Annie's Chocolate Bunnies are vegan and make a great chocolate crust base. 

    You could also use chocolate graham crackers if that's all you have.

    You may need to use more vegan melted butter to get the other two to hold because the Oreo's cream helps keep the crust together, but they will work.

    Can I make a gluten-free version of this pie?

    Yes, they now make gluten-free Oreos, and those will work great! 

    Everything else is already gluten-free.

    Can I use a different vegan whip cream than So delicious?

    You can; that's just my favorite. 

    People often like to make their own whipping cream using coconut cream, which is fine.

    I just haven't worked on a recipe to my liking as of yet.

    Can I make this without an electric mixer?

    I have only ever used an electric mixer for this recipe; I feel like the whipping is necessary to mix the peanut butter and powdered sugar well.

    You can use a stand-up mixer with the whisk attachment.

    If you don't have either, you can try whipping it with a whisk for a while, but I'm not 100% sure whether it will work.

    Can I top this with chocolate?

    If you want to make this more of a giant chocolate peanut butter cup, you can make a layer of vegan chocolate ganache.

    I would mix 1 cup of vegan chocolate chips with ½ cup vegan milk and microwave for 30 seconds, then stir until melted.

    Then pour over the top of the peanut butter pie and let harden in the fridge or freezer.

    Can I use almond butter instead of peanut butter?

    You can, but almond butter has a different consistency and will likely make the pie a bit denser. But it should taste delicious!

    What's the best way to decorate this pie?

    I like to drizzle vegan chocolate syrup or melted chocolate chips if that's all you have.

    Drizzling a little bit of melted peanut butter makes for good drizzling.

    I like to top mine with chopped-up vegan peanut butter cups, but that's up to you. It's not necessary, just a fun accent.

    You could also add chopped peanuts if you wanted more of a crunch.

    What ingredients do I need for this peanut butter chocolate pie?

    Crust

    • Oreo cookies or Annie's chocolate bunnies
    • melted vegan butter

    Creamy peanut butter filling

    • creamy peanut butter
    • powdered sugar
    • vanilla extract
    • vegan butter

    Topping

    • So Delicious Coco whip or your favorite vegan whipped cream or vegan cool whip

    Optional

    • Drizzle vegan chocolate sauce
    • Drizzle melted peanut butter
    • Crushed-up vegan peanut butter cups

    How do you make this easy vegan peanut butter pie?

    Let's start by making the oreo cookie crust.

    Take a food processor, add the Oreos package, and process until crumbs.

    Take a medium bowl and melt the ¼ cup of vegan butter. Combine this with the crushed Oreos until well mixed.

    Take a pie dish and press the Oreo mixture firmly into the bottom and sides of the pie pan.

    It's important to get it firmly, or else it won't stay together.

    Place this in the freezer for 10 minutes.

    Get a medium bowl and combine the peanut butter, vanilla extract softened vegan butter, and powdered sugar with an electric mixer until smooth and combined.

    Pour this peanut butter mixture into your prepared pie crust and spread it evenly.

    Place this in the freezer for 10-20 minutes.

    Add the vegan whipping cream and any topping you want.

    Place in the freezer for 12 hours or until the peanut butter filling sets.

    How do you serve this pie?

    This creamy peanut butter pie is best served cold out of the fridge.

    It tends to get soft (although still delicious) if it's left out too long.

    How do you store leftovers?

    This pie should be covered tightly with plastic wrap or placed in an airtight container in the fridge for up to 5 days.

    Can you freeze peanut butter pie?

    Yes, this pie freezes great. Just place the pie in an airtight freezer-safe container for up to 3 months.

    You can eat this frozen or let it defrost in the fridge or on the counter at room temperature until not frozen.

    Ingredients

    • ½ cup 1 stick softened vegan butter

    Topping

    • So Delicious Coco whip or your favorite vegan whipping cream

    • Drizzle vegan chocolate sauce
    • Drizzle melted peanut butter
    • Crushed up vegan peanut butter cups

    Instructions

    • Take a food processor and add the package of Oreos; let process until crumbs.
    • Take a medium bowl and melt the ¼ cup of vegan butter. Combine this with the crushed Oreos until well-mixed. Take a pie dish and press the Oreo mixture firmly into the bottom and sides of the pie dish. It's important to get it firmly or else it won't stay together. Place this in the freezer for 10 minutes.
    • Get a medium bowl and combine the peanut butter, softened vegan butter, vanilla extract, and powdered sugar with a hand mixer until smooth and combined. Pour this peanut butter mixture onto the crust and spread evenly. Place this in the freezer for 10-20 minutes. Add the vegan whipping cream and any topping you want.
    • Place in the freezer for 12 hours or until the peanut butter layer is set up.

      In the first picture of the glass measuring cup with the peanut butter filling ingredients, there appears to be vegan butter or something other than peanut butter, powdered sugar, and vanilla extract. I don't see that listed in the ingredients for the filling, so could you clarify if there is a missing ingredient from the recipe? Thanks!
