    Easy Vegan BBQ Tostadas

    These easy vegan BBQ tostadas are a perfect meal for a busy evening. Made with a crispy corn tortilla, a layer of hummus, BBQ chickpeas and a little vegan cheese.

    Some of the most simple recipes seem to be the best ones, anyone else feel that way?

    I love a quick, easy, filling dinner that no one in my family will complain about.

    These easy vegan BBQ Tostadas are just that, quick, easy, and delish!

    I love that this recipe uses beans.

    I have found mashing up beans can be such a great meat substitute.

    It's never going to taste like meat, but I don't want it to. The mashing seems to make the flavors be able to penetrate the beans better.

    For this recipe, I used a combo of black beans and garbanzo beans.

    You could make your own, but I used cans for the ease of dinner.

    Let's chat BBQ sauce for a minute.

    I don't actually have a homemade BBQ sauce. If you have an awesome recipe send it my way.

    But like I said above the quicker the better for me, evenings are crazy enough so your favorite store-bought BBQ sauce will do.

    What ingredients do you need to make these easy vegan bbq tostadas?

    • black beans
    • garbanzo beans
    • BBQ sauce ( your fav)
    • Hummus
    • Corn Tortillas
    • Vegan cheese (optional)

    How do you make this easy vegan dinner?

    Preheat your oven to 425 degrees. Get two cookie sheets and spray with oil to prevent sticking and set aside.

    Take a colander and rinse and drain the beans.

    Take the rinsed and drained beans and add them to a medium bowl.

    Now use a potato or pastry cutter to smash the beans.

    Take your half cup of BBQ sauce and stir it into the bean mixture until incorporated.

    Now take your corn tortillas and spread a layer of hummus on them.

    Take the bean mixture and put an even layer of beans on top of the tortilla and hummus.

    Top with a sprinkling of vegan cheese.

    Place on the cookie sheet (mine fit 6 per cookie sheet). Cook for 20-25 minutes until the tortilla is a little crispy.

    If you have a big family or just a family with a big appetite AKA; my husband, then you will want to double this recipe. I usually serve this with a side of roasted vegetables.

    • 15.5 oz can black beans
