Vegan Chicken Broth

This vegan chicken broth can be sub into any recipe you need chicken broth for. It's full of flavor and the perfect substitute. You can also freeze it into portions for later use.

Ingredients

  • 1 tablespoon olive oil
  • 1 yellow onion diced
  • 2 cloves garlic minced
  • 2 carrots diced (4 baby carrots)
  • 2 celery stalks diced
  • 4 cups vegetable broth
  • 2 cups water
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon sea salt
  • ½ teaspoon ground black pepper
  • ¼ teaspoon poultry seasoning

Instructions

  • Heat the olive oil in a large pot over medium heat.
  • Add in the onion, garlic, carrots, and celery and sauté for 5 minutes, stirring occasionally.
  • Add in the vegetable broth, water, bay leaves, thyme, oregano, salt, poultry seasoning, and pepper and stir to combine.
  • Bring the mixture to a boil, then reduce heat to low and simmer for 20 minutes.
  • Remove the bay leaves and discard them. Use an immersion blender or blender to blend the vegan chicken broth until smooth.
  • Use in place of chicken broth in your favorite recipes.
