Vegan Hawaiian Mac Salad

- 2 cups dry macaroni noodles
- 2 TB apple cider vinegar
- 1 cup vegan mayo
- 1 cup plain vegan plant milk
- ½ TB white sugar
- ½ teaspoon pepper more to taste
- ½ teaspoon salt
- ½ cup chopped celery
- 2 TB onion finely chopped
Cook your noodles in salted water, strain them and then add to a large bowl still warm. Pour your 2 TBs of apple cider vinegar and stir; let that marinate for a few minutes.
Now add the remaining ingredients to the noodles and stir. At first, it will look like the plant milk won't absorb, but it will. This is best if it has a few hours, if not overnight, for the flavors to all come together.
