This easy vegan coleslaw uses oil instead of a mayo-based leaving it light and delicious.

Dressing
- 2 TB onion diced small
- 1.5 TB oil
- ½ TB white sugar
- 2 TB red wine vinegar
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- Optional; avocado chunks
Get a medium bowl and mix the dressing ingredients and stir. Then add your coleslaw, stir until combined, and place in the fridge covered for at least 30 minutes before serving; the longer, the better.
**Add a 16 oz bag of coleslaw if you want it to be less saucy.
