Vegan Coleslaw

This easy vegan coleslaw uses oil instead of a mayo-based leaving it light and delicious.

Ingredients

  • 8 oz bag coleslaw mix**

Dressing

  • 2 TB onion diced small
  • 1.5 TB oil
  • ½ TB white sugar
  • 2 TB red wine vinegar
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • Optional; avocado chunks

Instructions

  • Get a medium bowl and mix the dressing ingredients and stir. Then add your coleslaw, stir until combined, and place in the fridge covered for at least 30 minutes before serving; the longer, the better.

Notes

**Add a 16 oz bag of coleslaw if you want it to be less saucy.
