Vegan Cinnamon Roll Ups French Toast Casserole

This vegan cinnamon roll up french toast casserole tastes like cinnamon rolls without all the work.

Ingredients

  • 1 loaf of thick toast the amount you use will vary depending on the size of your toast

liquid

  • 1.5 TB ground chia seeds
  • 1 cup plant milk
  • 1 teaspoon cinnamon ground
  • ¼ teaspoon nutmeg
  • 1 teaspoon vanilla extract
  • pinch salt
  • 2 TB brown sugar
  • ¼ cup flour
  • 1 teaspoon baking powder

The Filling

  • 3 tablespoons vegan butter melted
  • 3 tablespoons brown sugar
  • 2 tablespoons cinnamon

Glaze

  • 1 cup powdered sugar
  • 1 TB vegan milk more if you need it but start there
  • ¼ teaspoon vanilla extract

Instructions

  • Start by preheating your oven to 350 degrees, greasing an 8x8 pan, and set aside.
  • Next, make your Liquid. Take a small mixing bowl and mix your plant milk, cinnamon, nutmeg,
    vanilla, salt, brown sugar, flour, baking powder, and ground chia seeds; whisk together until combined. Let this sit and thicken.
  • Now take your bread slices, cut off the crust, then take a rolling pin and roll the bread out thin; repeat this with the other slices, and set aside.
  • Take your filling and combine.
  • Take your flattened bread, put about a teaspoon of the filling, spread evenly in the middle, and then roll tightly up, pinching the seam to hold the roll together. Set aside and then repeat with the remaining bread until your filling is gone. Then take the rolls and place them into the 8x8 as you would with enchiladas. Now Take your liquid and pour it evenly over the rolls.
  • Bake in the preheated oven for 30-40 minutes. Check at 30 minutes. It should have most of the wiggle out of it.
  • Make your glaze by combining the glaze ingredients with a whisk or fork until smooth. Then drizzle the glaze over the french toast casserole.

Notes

There are other options if you don't want an actual casserole. You could dip the rolls, then cook the rolls in a skillet with vegan butter and grill on all sides and serve. And they are extremely delish!
Bread type- You don't want your typical crusty stale bread for this. You need to be able to roll it out and then roll it up. I went with a thick, but softer white bread.
