Start by preheating your oven to 350 degrees, greasing an 8x8 pan, and set aside.
Next, make your Liquid. Take a small mixing bowl and mix your plant milk, cinnamon, nutmeg,
vanilla, salt, brown sugar, flour, baking powder, and ground chia seeds; whisk together until combined. Let this sit and thicken.
Now take your bread slices, cut off the crust, then take a rolling pin and roll the bread out thin; repeat this with the other slices, and set aside.
Take your filling and combine.
Take your flattened bread, put about a teaspoon of the filling, spread evenly in the middle, and then roll tightly up, pinching the seam to hold the roll together. Set aside and then repeat with the remaining bread until your filling is gone. Then take the rolls and place them into the 8x8 as you would with enchiladas. Now Take your liquid and pour it evenly over the rolls.
Bake in the preheated oven for 30-40 minutes. Check at 30 minutes. It should have most of the wiggle out of it.
Make your glaze by combining the glaze ingredients with a whisk or fork until smooth. Then drizzle the glaze over the french toast casserole.
