Vegan Frito Pie

This vegan Frito pie is the perfect quick dinner casserole.

Ingredients

  • 1 teaspoon oil
  • half onion, chopped
  • 2 cloves garlic, minced
  • 2 Impossible burger patties
  • ½ TB cumin
  • 1 TB Chili Powder
  • ¼ teaspoon smoked paprika
  • tsp cayenne pepper
  • 1 can chili beans in sauce
  • 1 can black beans rinsed and drained
  • 1 can corn, drained
  • 1 cup tomato sauce

Topping

  • 1 bag fritos
  • ½- 1 cup vegan cheddar cheese amount will vary on how cheesy you want it

Optional toppings

  • Guacamole
  • vegan sour cream
  • salsa

Instructions

  • Preheat your oven to 350 degrees. Get a 9x13 pan, grease it with cooking spray, and set aside.
  • Take a large pan and add some oil and your diced onion; cook, stirring occasionally for about 5 minutes or until cooked. Then add your garlic and stir cooking for about 30 seconds.
  • Add your remaining ingredients except for the fritos and stir, cook for about 5 minutes.
  • Take your prepared 9x13 pan and place the bean mixture in an even layer, then top with vegan cheese and Fritos covering the top.
  • Bake in the preheated oven for 20 minutes. Serve with toppings if desired.
