Vegan Cheeseburger Egg Rolls

These vegan cheeseburger egg rolls have all the flavor of a classic burger wrapped up in an egg roll filling. These can be an appetizer or the main course.

Ingredients

  • 12 oz Impossible or Beyond Beef
  • 1 small onion, diced small
  • 3 cloves garlic, minced
  • 1 teaspoon vegan worcestershire sauce
  • ½ teaspoon yellow mustard
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon ketchup
  • ½ cup dill pickles, diced small
  • ½ cup vegan cheddar cheese or to taste
  • Egg roll wrappers

Instructions

  • Start with a skillet and add some oil and chopped onions, cook the onions for about 5 minutes until they are soft and translucent. Add your minced garlic and cook, stirring for about 30 seconds.
  • Add your vegan beef and stir as needed until cooked through.
  • Now add your seasonings; worcestershire sauce, yellow mustard, salt, pepper, ketchup, pickles, and cheese, and stir until combined. Remove from heat.

Wrap your egg rolls

  • Take one wrapper and place it on the counter, and fill it with 2-3 TB of filling, these do puff up when they cook, so don't overfill them.
  • Roll one corner over and fold it in half essentially but starting at the corner.
  • Then roll the right side in, making sure you're squaring off the side, then repeat with the left side.
  • Then roll the rest of the way closed. You can use a dab of water to seal with edges.

Cook them- You can air-fry them or cook them in oil.

    Frying-

    • The amount of oil you need will depend on your pan size. Heat the oil over medium heat until it starts to bubble. Then place the egg rolls with the flap side down, cook for 2-3 minutes, then flip, checking to make sure they aren't burning. Make sure all sides are cooked then place them on a paper towel-lined plate.

    Air-Fryer-

    • Preheat the air-fryer to 390 degrees.Spray the egg rolls with cooking spray and cook for 4 minutes, then flip and cook for 3 minutes or until cooked through.
