Easy Vegan Corn Casserole

This easy vegan corn casserole is comfort food the whole family will enjoy. It has simple ingredients, is a great recipe, and is perfect for your holiday meals.

Ingredients

  • cup all purpose flour
  • cup cornmeal
  • cup white sugar
  • 1 TB baking powder
  • ½ teaspoon salt
  • 1 cup vegan sour cream
  • ½ cup vegan butter melted
  • 1 can creamed corn
  • 1 can whole kernel corn drained

Instructions

  • Start by preheating your oven to 350 degrees. Take an 8x8 baking dish and lightly grease, set aside.
  • Take a large bowl and combine the dry ingredients and stir. Now add your wet ingredients and any mix-ins you want and stir until combined and no flour streaks remain.
  • Pour this mixture into the prepared 8x8 pan and bake in the preheated oven for 45 minutes.

Notes

If you want to use JIffy Cornbread Mix-
If you would rather use the store-bought version then omit the flour, cornmeal, sugar, baking powder, and salt. And just add the box mixed with the rest of the ingredients and cook accordingly.
