Preheat your oven to 375 degrees, prep a 9x13 pan with cooking spray, and set aside.
Take your apples and peel the skin and remove the core. Then slice the apples as thinly as you can. You can use an apple corer and peeler if you have one. That makes the process a little quicker. Put your apples in a medium bowl and put 1 TB of flour, 1 teaspoon cinnamon, and ½ cup brown sugar, stir, then set aside.
Now make the top and bottom. Mix the oats, flour, sugar, baking powder and soda, cinnamon, and whisk. Then take your cold vegan butter and cut it into small cubes. Then take the tiny cubes and add them to your dry mixture. Now use a pastry cutter and cut it into the dough until well combined. Now add your plant milk and stir.
Take half your dough and press it in the bottom of the pan, layer the apples on top of the crust and then sprinkle the additional dough evenly on the top of the apples. This dough can be sticky, so if you need to, use a piece of saran wrap to help press the dough in, and then discard.
Let this cook for 30-40 minutes, depending on how long it takes your apples to cook. Mine took 35 minutes.
