Easy Vegan no oil Banana Bread

This delicious, easy vegan oil free banana bread is the perfect afternoon snack, breakfast or just healthy treat.

Ingredients

  • 3-4 very ripe bananas mashed
  • ¼ cup white sugar
  • ¼ cup brown sugar
  • ¼ cup applesauce
  • ¾ teaspoon baking powder
  • ¾ teaspoon baking soda
  • ¾ teaspoon salt
  • ¼ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 2 TB almond butter
  • 1 teaspoon vanilla
  • 2 TB flax seeds + 4 TB water
  • 1 ½ cup all purpose flour

Instructions

  • Preheat your oven to 350 degrees. Take a loaf pan and either spray lightly with oil and dust with flour, or for an oil-free option, use oven-safe parchment paper.
  • Make your flax egg in a small cup by mixing two tablespoons of flax meal with 4 TB water and setting it aside while gathering the rest of the ingredients.
  • Mix all the ingredients but the flour and stir until combined. Once those are combined, add your flour and stir just until combined. Now pour the batter into the prepared pan.
  • Bake for 50-60 minutes. Mine is done around the 55-minute mark. Let cool for 5- 10 minutes and then place the loaf on a cooling rack and enjoy.
