Vegan Apple Cinnamon Granola Bars

Ingredients

  • 2.5 cups Oats
  • 2 teaspoon cinnamon, ground
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ¼ cup maple syrup
  • ¼ cup brown sugar
  • ¾ cup vegan milk
  • 2 teaspoon vanilla extract
  • 2 flax eggs (2 TB flax meal with 4 TB water)
  • 1 cup dried apples, chopped or fresh apple
  • ½ cup rice Krispies

Instructions

  • Preheat the oven to 350 degrees. Grease an 8x8 glass pan and set aside.
    Make your flax eggs by grinding some flax seeds. Take 2 TB of the ground flax meal into a small cup, add 4 TB of water, stir then set aside.
    Take your dried apples and chop them in small pieces.
    Take 1 cup of the oats and grind it to make flour. Take a medium bowl and combine the ground and remaining oats, cinnamon, baking powder, salt, Rice Krispies, brown sugar, and stir. Now add the plant milk, maple syrup, vanilla, add the chopped dried apples and stir until all combined.
    Take your mixture and press it evenly into the 8x8 greased pan. Cook for 15-18 minutes. Let cool before serving.
