Tasty Vegan Twix

Ingredients

Caramel

  • 1 cup packed dark brown sugar
  • 6 TB vegan butter, room temp
  • 3.7 (half can) oz vegan sweetened condensed milk
  • cup dark corn syrup
  • 2 TB + 2tsp maple syrup
  • 1 teaspoon dark molasses
  • ½ teaspoon vanilla extract
  • ¼ teaspoon salt

Chocolate Coating

  • 2 cups chocolate chips
  • 1 TB neutral oil

Cookies

  • 10 oz Package Lorna Doones (40 Cookies)

Instructions

  • Take a 3 qt saucepan and combine all ingredients, stir with a wooden spoon until mixed then add a candy thermometer. Stir on medium low heat until the caramel is at 238 degrees, then remove from heat. Let the caramel sit in the fridge for an hour or two, until it's easy to mold and not going to come off of the shortbread.
    While you're waiting for the caramel to cool you can take a cookie sheet (that can fit in the fridge or freezer) line it with parchment paper. Take your Lorna Doones cookies and place them on the cookie sheet in a single layer.
    When your caramel is ready, take a spoon and spoon on a thick layer of caramel onto the cookie. It should be cool enough that it is staying on and not melting off. If it's still melting off, your caramel is not ready. Layer all of the cookies with a thick layer of caramel and stick it in the freezer while you work with the chocolate.
    Take a small bowl and mix 2 cups of chocolate chips and 1 TB of oil. Heat in the microwave for 1 minute then stir until all the chocolate is melted. Do not put back in the microwave, it should be enough time to get it melted and you don't want to seize the chocolate. Stir until smooth.
    Take the caramel cookies out of the freezer and use a pastry brush to brush on the chocolate. You can dip these but I found it uses a lot more chocolate that way. Or you can get your hands messy and brush the cookie in your hand then put it down and brush the rest of the cookie on the cookie sheet. Do this with the remaining cookies and stick in the freezer until they are set.
    Store either in the freezer or fridge so they don't melt.
